Everything that a bride has to worry about before her wedding is enough to make her pull out her hair! We a Cooper House make the decisions a lot less complicated, that’s our job, and we love it. Last weekend we had 2 beautiful wedding. Both were unique but personalized for their guest. We have the most wonderful recipe for Chicken, it is easy to make and not that expensive.
Chicken and Pasta
2 Boneless/ skinless chicken breast
1 cup EVOO
2 gloves of garlic
Salt and Pepper to taste
3 Table of sun dried tomatoes
6 large fresh basil leaves
Angle Hair pasta for 2
1/3 cup of Itialan Cheese blend.
Salt and pepper chicken breast
saute in 2 T EVOO
(about 4 minutes on each side) Temp 165
In the meantime Sweat the garlic in EVOO (do not brown)
Turn EVOO down to low (Infuse the oil for 5 minutes)
Remove from heat and place the ruff chopped sun dried tomatoes, salt and pepper to taste, add the basil leaves.
Boil pasta in salt and pepper and a little oil
Place the pasta in a bowl and cover with a little of the sun dried tomato oil, mix in and taste (you want to add just a little oil at a time so you do not put to much oil in dish). Don’t drown it! Julianne the chicken breast. Cover with 4 cheese.
